Basil Chicken

1 lb chicken
water to cover 2/3 of the chicken in your pot/wok
a few slices of ginger
1-2 Tbsp dark sesami oil
6-8 Tbsp soy sauce
2-3 Tbsp sugar
1-2 Tbsp cooking wine

Stew chicken pieces for 20-30 min. with the ingredients, and add
a handful of basil leaves (leave the soft stems in) for the last
15 min. Save some leaves for the last minute for color.

Turn the chicken a few times in the stewing process.

After chicken is done, if too much sauce remains, thicken by turning
up the heat. Serve over rice.

Note: If you use a wok, stir fry ginger in sesami oil first, add
chicken, stir fry, then, add water and the remaining ingredients.
