BOILED CHICKED a la ARDEMAGNI
(4 servings)

1 pound boiled chicken
1/2 onion or scalogno
2 Annurca Apple (1 Annurca Apple is about 1/2 apple size)
1 bay leaf
5 Tablespoon Olive oil
6 anchovies
1 glass of soup (the water where you boiled the chicken in)
Orange Marmalade

Dice the boiled chicken. In a pan filled with oil, slowly fry the
sliced onions, the chopped apples, the bay leaf and the anchovies.
When the onions are light brown and anchovies are melted, add the
chicken. Just 2 minutes on the fire, then serve with marmalade
aside.
