Chicken Cacciatori

3 lbs. frying chicken
1/4 cup oil
1 medium onion, chopped
1 small green pepper, chopped
1 cup chopped celery
2 cloves garlic, pressed or chopped fine
2 8 oz. cans tomato sauce
1/2 cup water
1/2 cup shredded cheddar cheese
1 tsp. salt (or less to taste)
1/4 tsp. each pepper, basil and oregano
1 large bay leaf
grated Parmesan

Brown chicken in oil and set aside. Brown chopped vegetables.
Add remaining ingredients and chicken. Simmer 45 minutes or until
tender. Serve over rice. Pass parmesan on the side.

Note: I like to double the vegetables and tomato sauce (but not
the cheese).
