In a medium bowl combine: 1 egg white, lightly beaten 1 T soy sauce 1 T cornstarch
Add 1 1/2 lb skinless, boneless, chicken breasts, cut into 1 in. cubes
Toss to coat and let stand for 15 minutes.
In another small bowl mix:
1/4 cup soy sauce 1 t cornstarch 1 T dry sherry 2 t cider vinegar 1 t sugar
Mix well and set aside.
In a large frying pan or wok, heat:
1/4 cup oil, over medium heat
then add: 2/3 cup unsalted cashews, stir-fry for about 1 min. then remove with slotted spoon.
add chicken then stir-fry until opaque (2-3 min.), remove and set aside.
discard all but 2 T of the oil and add:
1 in. square of fresh ginger, peeled and quartered 2 scalions, sliced 1 8oz can water chestnuts, drained and sliced
stir-fry 1 min. then add chicken 1 med. green pepper, sliced seasoning sauce
Cook, stirring until thickened. Discard ginger pieces, add cashews.
Serve over rice
Prep: 15 min. Marinate: 15 min. cook: 5 min.
Serves: 6
