Shaker Cider Chicken

5 tablespoons butter
4 chicken breasts, boned and skinned
1/2 cup apple cider
1 tablespoon grated lemon rind
1 cup heavy cream
1 teaspoon each salt and white pepper (or to taste)

Melt butter in pan and brown chicken well on both sides.

Add cider and lemon rind, reduce heat and simmer until chicken is
done, about 10 minutes. Remove chicken and keep warm.

Cook pan drippings for a few minutes to reduce; add cream and simmer
for a few more minutes. Season with salt and pepper.

Pour sauce over chicken and serve. Serves 4.
