Oven Fried Cinnamon Honey Chicken
Yield: 4 servings

75 g plain flour
2 teaspoons salt
3/4 teaspoon ground cinnamon
1/4 teaspoon turmeric
1/4 teaspoon pepper
1 egg
2 tablespoon milk
5 tablespoons dried breadcrumbs
2 tablespoons oil
1.5 kg chicken; cut in 8 pieces

4 tablespoons melted butter
4 tablespoons honey
1 tablespoon fresh lemon juice

Combine the flour with all the spices. Beat the egg and milk. Coat
the chicken pieces with the flour. Combine the breadcrumbs with
the egg mixture to form a soft, moist mixture. Roll the floured
chicken pieces in the moist crumb mixture and arrange skin side up
in a roasting tin. Sprinkle with the oil. Bake for about 40 minutes
at 180 C / 350 F / Gas 4 or until crisp and brown. For the last 15
minutes, pour over the combined melted butter, honey and lemon.
This recipe works well with skin removed.
