Fried Cinnamon Chicken 1 chicken, cut in 8 pieces 1 Tblsp. cinnamon 3/4 Tblsp. salt 3/4 Tblsp. pepper 1/2 cup flour, plus 2 tablespoons flour reserved for gravy 1/2 cup canola oil (original recipe called for lard) 1 cup water or chicken broth Mix flour, salt, pepper, cinnamon together. Wash chicken and leave very wet. Dip chicken in flour mix. In a fry pan, heat oil and brown chicken on all sides. Cook for 45 to 55 minutes, turn to prevent burning.
Remove chicken and set aside. Drain and reserve 2 tablespoons oil. Add 2 tablespoons flour to reserved oil. Mix over low heat. Add the chicken broth or water. Add salt, pepper, and cinnamon to taste to gravy. Serve.
