Creamy Chicken with Asparagus

1 chicken breast, boned and skinned
12 asparagus spears peeled and, cut into 1' slices
1/2 onion, chopped or 1 shallot, chopped
3 tablespoons butter
1 tablespoon mustard
1 cup fresh cream
1 teaspoon grated lemon rind
2 tablespoons lemon juice
1/2 cup chicken stock
salt and white pepper, to taste
paprika
1/2 cup dry white wine

Season breast with salt and pepper. Set aside 30 minutes. Cut
chicken into 1 1/12" strips. butter in a pan and cook chicken
until almost brown. Add onion or shallot and cook until soft.
Add wine. Cook 2 minutes. Add broth, stir in mustard and add
asparagus. Cook 2 to 3 minutes. Stir in lemon rind, lemon juice
and salt and pepper.Cook 1 minute. Stir in cream and cook to reduce
to 3/4. Pour over pasta.

NOTES : Don't use cheese with this dish. May also be served with
rice.
