TENDER CRISP CORNISH GAME HEN OR SQUAB

3 whole cornish game hens or 6 squab

1/2 cup soy sauce
1 tablespoon sherry
1 tablespoons brown sugar
1/4 teaspoon ground pepper
2 slices fresh ginger, stripped

2 tablespoons honey
2 tablespoons soy sauce

oil for frying

Marinate birds for several hours in soy, sherry, brown sugar, pepper
and ginger. Put birds and marinade in a bowl and place on the rack
of a steamer. Steam for 40 minutes. Dry bird throughly. Refrigerate
till well cold. Glaze with honey/soy mixture. Deep fry in 3 inches of
oil until golden brown.
