Print this Recipe    Slow Cook Chicken

This is a great recipe for those days when don't want to spend a lot
of time in the kitchen. The aroma is fantastic and it can be
portioned a put into the freezer. (NOTE: If you're going to freeze
some, leave out the dumplings.)

5 lb Roaster
1-2 large onion, quartered
4 med carrots, cut into 1" pieces
1 lemon, quartered
1 lime, quartered
Peeled cloves from 1 garlic bulb
1 red bell pepper, cut 1" strips
1 green bell pepper, cut 1" strips
1 tsp crushed juniper berries
1 bay leaf
2 Tbl sage
2 Tbl rosemary
4 C chicken broth
salt & pepper to taste

Place chicken a large pot or slow cooker.
Add remaining ingredients and cover.
Follow slow cooker instructions or cook over low heat (barely
simmering) for four to six hours.
Remove the bay leaf.

Options--

If you don't happen to like the flavor of bell pepper that's been
cooked for so long, you can lightly sautee them and add during the
last 30 minutes, so.

Add 4 med potatoes (cubed) during the last hour of cooking.

Dumplings can be added.
