FRUITY CHICKEN FRICASSEE

3 lb chicken pieces
1/3 cup orange juice
juice of 1 lemon
1 Tbsp soy sauce
1/4 cup flour
1/2 tsp salt
1/4 tsp fresh grated ginger
1/4 tsp cinnamon
4 Tbsp butter
1/2 cup crushed pineapple, with its juice
1/2 cup tinned apricots with syrup
2 Tbsp sultanas
1/2 cup sweet sherry

Put the chicken in a shallow dish, combine orange and lemon juice
with soy sauce and pour over the chicken. Marinate, covered, in
refrigerator 2 hours. Remove chicken from the marinade and sprinkle
the pieces with flour mixed with seasonings, brown on all sides in
the butter. Add remaining ingredients, bring to the boil, lower
heat and simmer, covered 45 minutes or until the chicken is tender.
