Ginger Fried Chicken
2 pounds whole chicken, cut into pieces
1/4 pound fresh ginger root, grated
2 ounces chopped garlic
4 ounces Japanese soy sauce
2 tsps. salt
1 tsp. pepper
8 ounces flour
4 medium eggs
Add ginger, garlic, soy sauce, salt, and pepper to chicken, mix
well, and marinate overnight.
Add eggs to chicken. Mix together well. Add flour to coat. Mix
well. Fry until golden, about 5 minutes. Finish in oven, 350 degrees
for 30-35 minutes.
