Beer Batter Chicken

1-3/4 cups flour
1-1/2 tsps salt
1/2 tsp pepper
1/2 tsp red pepper, optional
1/2 tsp garlic powder
12 oz can beer
vegetable oil for frying
1 or 2 broiler-fryer chickens,cut up

Combine flour, salt, pepper(s), garlic powder, and beer. Whisk
until smooth, let stand 30 minutes.

Heat oil for frying to 375, dip chicken into batter. Let excess drip
off, and fry a few pieces at a time till cooked through and golden
brown. Keep fried chicken warm in a slow oven, while frying remaining
chicken.
