40-CLOVE GARLIC CHICKEN

1 frying chicken cut up or portions of your favorite chicken parts
2 tablespoons olive oil
1 medium onion cut into rings
dash of black pepper (salt optional)
poultry seasoning
1 cup white wine
2 heads of garlic, separated, not peeled
small red potatoes
3 -4 carrots peeled sliced diagonally
6-12 small white mushrooms

Preheat oven at 350 degrees. Cut up and skin chicken. Remove fat.
Brush with olive oil. Season with pepper poultry seasoning.

Place garlic casserole or baking dish. Place chicken on top. Scatter
potatoes, carrots and mushrooms around chicken. Pour wine gently
over chicken and vegetables. Bake at 350 degrees for one hour

Serve with garlic which can be squeezed out of coating with French
or country bread.
