CHICKEN WITH 40 CLOVES OF GARLIC

3-4 lb chicken
1 lemon
3-4 heads garlic

Break up garlic, leaving the skins on and put the cloves in a
roasting pan. Rub the chicken with salt, pepper and olive oil.
Poke holes over the skin of the lemon with a skewer and place inside
the chicken. Put chicken on top of the garlic and roast for 1 hour
in a 400F preheated oven.

Remove chicken and place to the side to set. Pour pan juices into
a cup and allow fat to rise, about 5 minutes. Spoon off fat and
serve sauce with chicken. Alternatively, you can return the juices
to the pan, bring to the boil and add a cup of red wine or beer.
Boil down by half.
