Chicken with Forty Cloves of Garlic (serves 4)

2 tbsp butter
1 tbsp olive oil
1 chicken, cut up
40 garlic cloves, unpeeled
1/2 tsp dried thyme
1 tsp salt
1/4 tsp freshly ground black pepper
2 tbsp lemon juice

Preheat oven to 350 degrees. In a large Dutch oven or kettle, melt
the butter in the olive oil. Add the chicken pieces and cook until
golden on all sides (approximately 5 to 10 minutes). Remove all
but 2 tablespoons of the fat. Add the garlic and stir until it is
coated. Sprinkle garlic/chicken mixture with the remaining
ingredients and add 1/4 cup of water. Cover tightly and bake for
1 and 1/2 hours.
