LEMON CHICKEN

4 boned and skinned chicken breasts
Juice of 2 lemons
1/2 cup flour
1/2 tsp. salt (optional)
1/4 tsp. pepper
1/4 tsp. paprika
1 Tbsp grated lemon peel
2 Tbsp brown sugar
1 Tbsp fresh lemon juice
1 Tbsp water
1 lemon, sliced thin

Place chicken in a bowl or casserole. Cover with lemon juice and
marinate in refrigerator for several hours or overnight, turning
chicken periodically. Oven 350*. Combine flour, salt, pepper and
paprika in plastic bag. Remove chicken breasts from marinade and
coat each with flour by shaking in plastic bag. Place chicken in
baking pan in single layer. Either peel the yellow (zest) from a
lemon and chop it fine in your food processor , or grate with hand
grater. Mix grated peel with brown sugar. Sprinkle the lemon
zest-brown sugar mixture evenly over the chicken breasts. Combine
lemon juice and water and sprinkle evenly over chicken. Put 1
lemon slice on each chicken breast and bake chicken for 35 - 40
min. or until thoroughly cooked.

Yield: 4 servings.
