CHICKEN AND LIME

6 chicken thighs or 3 large chicken breasts halves
2 tablespoons cooking oil
1 medium onion, chopped
1 clove garlic, minced
1/8 teaspoon hot red pepper
1/2 teaspoon ground cumin
1/2 teaspoon crushed coriander seeds
1/4 teaspoon turmeric
2 tablespoons soy sauce
2 limes

Heat oil in large skillet. Skin chicken and brown over medium heat.
Add onion and garlic and cook 2 minutes. Add all other ingredients
except limes. Reduce heat, cover and cook until tender, about 20
- 25 minutes. Immediately before serving, add the juice of 2 limes,
about 2 tablespoons. Heat through. Garnish with lime quarters and
serve. Makes 3 servings.
