MAPLE PECAN CHICKEN
1/4 cup chopped pecans 3 large onions, sliced thinly 3 tablespoons butter 1/3 cup maple syrup 4 large yams (about 2 pounds) 2 fryers (approx 2 1/2 lb each,) quartered 2 teaspoons salt
Lightly brown pecans in skillet. Remove. In same pan, cook onions with butter, about 15 minutes, stirring occasionally. While the onions are cooking, peel and slice yams into 1/2" slices. Sprinkle chicken with salt, arrange with yams in large roasting pan. Stir Maple syrup into onions, then spoon the mixture over the chicken.
Bake at 400 for 1 1/4 hours, basting occasionally. Serve, spooning sauce over, then sprinkling with the pecans
Makes 8 servings, about 485 calories per.
Note: you can use margarine instead of butter if you wish, also I double the onions and butter, and then cover the pan, because the original recipe seemed a bit dry for my tastes.
