Chicken with Mushroom Sauce
2 chicken fillets
100g baby mushrooms, sliced
2 Tsp dry white wine
1/2 cup cream
1/2 tsp seeded mustard
2 tsp chopped fresh chives
Cook chicken in pan with a little of the butter until almost done.
Remove from pan and keep warm. Add rest of butter and mushrooms,
cook, stirring, until lightly browned. Stir in wine, cream and
mustard, and return chicken to pan. Allow sauce to thicken slightly
and chicken to finish cooking, then serve, sprinkling with chives.
