Chicken with Papaya - Mexican

4 chicken breasts
1/2 small onion, large dices
2 TBS diced green chilies
1/2 tsp ground red pepper
1 medium to large papaya, diced
1/4 cup Sangria (sweet Mexican red wine)
3 Tbsp oil
salt, if desired
fresh ground pepper, if desired
1 cup shredded Colby or cheddar cheese

Preheat oven to 375. Saute onion in oil until soft. Remove from
pan and place in medium bowl. Brown chicken in same pan. Sprinkle
with ground red pepper while browning (be sure to sprinkle both
sides). Add salt and pepper if desired. In onion bowl, add green
chilies, Sangria, and papaya.

Toss to mix. Place chicken in oven proof baking dish. Pour onion
mixture on top. Bake for 10 minutes. Top with shredded cheese
and bake approx 5-10 minutes longer, or until cheese is melted.
Great when served with guacamole and queso dip.
