QUICK CHICKEN PARMIGIANO

4 boneless chicken breast halves
1 egg
1/4 cup water
2 to 3 tablespoons olive oil
Bread crumbs
1/2 pound mushrooms
1/2 cup chopped onion
1 green bell pepper, chopped
1 1/2 teaspoons crushed garlic
1 to 1 1/2 cups favorite commercial spaghetti sauce
1 cup shredded mozzarella cheese

Preheat oven to 350 degrees. Wash chicken breasts. Beat egg and
add water. Heat olive oil on low flame in frying pan. Dip breasts
in egg/water and then coat with bread crumbs. Lightly saute coated
breasts in olive oil, about three minutes on each side. Remove from
pan.

Using same pan, saute the mushrooms, onions and green pepper. Add
crushed garlic. (You might need to add a little more olive oil to
pan.) Saute all for about 15 minutes, then add spaghetti sauce.)

Place chicken breasts in a medium-deep baking dish. Cover with
sauce. Then cover with mozzarella cheese and bake for 35 minutes.
Serve with pasta and Italian bread.
