Chicken and Peaches Piquant
Serves 4-5

2 whole skinned and boned chicken breasts

1 1/2 teaspoon seasoned or regular salt
1/2 teaspoon pepper
14 oz can sliced peaches
1 1/2 tbls. vegetable oil
1 large onion sliced
1 cup ketchup
2 tablespoons soy sauce
1 large green pepper, cut in squares
Hot cooked rice

Cut chicken in thin strips. Sprinkle with seasoned salt and pepper.
Drain peaches reserving syrup. Saute chicken in oil two mins. Add
onion; continue cooking untill onion is tender crisp.

Blend ketchup and peach syrup with enough water to make two cups
liquid; add soy sauce. Pour over chicken in sauce pan. Cover and
simmer 20 mins Add green pepper and peaches. Replace cover and
cook 10 mins. longer. Serve over rice.
