Portuguese Chicken
2 to 3 tablespoons olive oil 1 cup sliced scallions 2 cloves, garlic, crushed 1/8 tsp hot pepper sauce (more if you like it hot) 4 medium tomatoes, chopped 1 tablespoon of cider vinegar 1 bay leaf 1/2 teaspoon ground cloves 1/2 teaspoon Worcestershire sauce 1/8 teaspoon saffron (this will not change taste, but the visual effect is awesome, thus it can be left out for the faint of $$$) 1/8 teaspoon freshly ground black pepper 4 chicken breasts, skinned, boned
In a large fry pan, heat oil. Brown scallions, about 3 minutes. Add garlic and hot pepper sauce cook 1 minute. Add tomatoes, vinegar, bay leaf, cloves, Worcestershire, saffron, and pepper. Bring to a boil then simmer, uncovered for 15 minutes.20 Place chicken on top of mixture, cover and simmer for 15 to 20 minutes, or until the chicken is done.
It is not authentic but it is good.
