Quail with Mushrooms, Garlic and Coriander Yield: 2-4 servings
4 quails 4 small cloves garlic; peeled 25 g butter; softened 1 small clove garlic; crushed 1 tablespoon fresh coriander leaves; chopped salt and fresh ground black pepper
50 g small button mushrooms; sliced 50 g brown cap mushrooms; sliced 25 g butter 285 ml fresh chicken stock fresh coriander leaves; to garnish
Preheat the oven to 220 C / 425 F / Gas 7. Place a clove of garlic inside each quail. Roast for 25 minutes. Mix together the butter, crushed garlic, chopped coriander and season, then place in cling film and roll into a sausage shape. Place in the refrigerator to firm up.
For the sauce, saute the mushrooms in the butter for 5 minutes, until golden. Add the stock and simmer for 8-10 minutes. Season to taste. Serve each quail in a pool of mushroom sauce. Top with a slice of the herbbutter and garnish with coriander. Serve 1 per person as a starter or 2 per person as a main course.
