Roast Quail

2 quail per person
butter, softened
rashers streaky bacon; optional

If the birds are frozen, thaw them completely before cooking. Wash
the birds inside and out and dry on kitchen paper. Add some softened
butter or other fat and lay bacon over the breast if using. Preheat
the oven to 190 C / 375 F / Gas 5 and have the birds at room
temperature before they go in. Roast for 15-20 minutes, basting
frequently.
