Rotel Tomato Chicken

1/4 cup olive oil
1 T lime juice
1/8 t crushed red pepper
4 chicken breast halves, skinned, boned and cut into 1.5" stips
1 clove minced garlic
1/2 lb fettuccine
2 T margarine
1 t grated lime rind
1 can RoTel tomatoes

In gallon size zip lock bag, combine first 3 ingredients. Add chicken,
seal, shake well and refrigerate for 15 minutes. Remove chicken and
discard marinade. Spray skillet w/ vegetable oil spray (Pam etc.). Add
chicken and garlic, cook until chicken is nearly done. Add Ro*Tel, heat
to a boil. Reduce and simmer 10 minutes or until chicken is done.

Cook fettuccine according to package directions; drain. Add margarine and
lime rind; toss well and keep warm. Arrange fettuccine on palter, top
with chicken and sauce. Sprinkle with parmesan cheese (Kraft Red Pepper
parmesan does well).
