Potato Dressing for Poultry

1 cup diced celery
1/2 cup diced onion
2 cups bread cubes
4 Tablespoons margarine
3 eggs, beaten
chopped parsley sprigs
2 cups mashed potatoes

Simmer celery and onion in 1/4 cup water until tender. Brown bread
cubes in margarine in skillet. Fold eggs and parsley into potatoes;
stir in celery mixture and bread cubes. Spoon into greased casserole;
cover. Bake at 350 degrees for 30 minutes; uncover. Bake 15 minutes
longer.

Yield: 6 servings
