SPINACH STUFFING

2 sticks of butter
1/2 lb. mushrooms, thinly sliced
1-2 cups diced celery
1 cup chopped onion
16-oz. package of frozen creamed spinach, defrosted
6 cups seasoned bread crumbs
2 cups ricotta cheese
2 eggs
2 Tbs. minced parsley

Melt the butter and saut\xe9 the mushrooms, celery and onion for
about five minutes, until tender. Remove from the heat. Add the
remaining ingredients. Mix well. Transfer everything to a casserole
dish. Bake at 325 for 30-45 minutes.
