Potato Stuffing for Turkey
5 lb potatoes, peeled, cooked and mashed smooth 1/2 to 3/4 lb bacon, chopped 1 large onion, diced 3-5 stalks celery, diced 1-2 Tbsp summer savoury 1 tsp - 1 Tbsp poultry seasoning 1 tsp sage thyme 1 tsp garlic salt & pepper to taste Cube bacon and fry until crisp. Add celery and onion and cook until onion is translucent. Pour contents of pan, complete with drippings into mashed potatoes. Add spices and mix well.
Stuff both cavity and tail of bird as skewer skin flaps well, or it will leak out. Remaining can be baked in oven for to 1 hour at 350F.
Note: Start with small amounts of spices until you have the taste you want.
