Pilgrim Turkey Loaf
Makes 6 servings

1 cup herb-seasoned stuffing mix
1/2 cup milk
1 egg
1 small onion, chopped
1 celery rib, chopped
2 tbsp. chopped parsley
1 tsp. poultry seasoning
3/4 tsp. salt
1/4 tsp. pepper
1 1/2 pounds ground turkey
cranberry sauce (optional)

Preheat oven to 375 F. In a medium bowl, blend together stuffing
mix, milk and egg: let stand 5 minutes. Stir in onion, celery,
parsley, poultry seasoning, salt and pepper. Add ground turkey and
mix until well-blended. Pack mixture into an 8 by 4 inch loaf pan.
Place on a baking sheet and bake until a meat thermometer inserted
in center of loaf reads 180 F, about 1 hour. Let stand 10 minutes
before serving. Serve turkey loaf with cranberry sauce if desired.
