Yorkshire Chicken
1 1/4 cup flour 1 1/2 tsp. salt (1/2 tsp. of this for frying) pepper 4 whole chicken legs and thighs 2 tsp salad oil 2 tsp margarine 1 tsp baking powder 1 tsp sage 3 eggs 1 1/2 cups milk
Mix 1/4 cup flour with 1/2 tsp. salt and pepper. Dredge chicken in flour mixture. Heat oil and margarine in frying pan over medium heat, add chicken and brown. Transfer chicken and drippings to 9 X 13 baking dish. Place in 350 degree oven. Stir remaining 1 cup flour, 1 tsp. salt, baking powder, and sage. Then in blender, beat eggs. Blend in milk. Add dry ingredients to egg mixture and beat until smooth. Pour over chicken bake uncovered 350 degrees for 1 hour until puffy and brown.
