Sweet Italian Sausage

5 lb pork
1 1/2 oz salt
1/2 oz course ground black pepper
1/4 oz paprika
3/4 oz whole fennel seeds
8 oz cold water
1/2 oz dextrose

Grind the pork using a 3/8" plate. Add the spices and water to
the ground pork and mix well (...I use a KitchenAid mixer for this
step but I have also done this by hand...). Stuff into casings.
