Italian Sausage

2 tsp salt
1 tsp black pepper
4 tsp fennel seeds
4 tsp oregano
1 tsp garlic powder
8 lb pork shoulder

Cut the pork into 1 1/2" cubes. Sprinkle combined seasoning on
pork and toss to distribute. Grind. Shape sausage into patties.
