Jerky
1 cup soy sauce 1 cup worcestershire sauce 1/4 cup tabasco 3 tablespoons kosher salt 1 tablespoon onion powder 1 tablespoon garlic powder 1 tablespoon black pepper, ground to taste 1 tablespoon garam masala (optional) 2 level teaspoons InstaCure
Marinate 24 hours, turning a couple of times Dehydrate at 125 F for 10-15 hours. Don't dry it to the point where it's totally stiff, that makes it less flavorful. Expect a dried yield of about 1/3 the weight you started with.
FWIW, I like my American Harvester AH-2400 dehydrator. I have never broken a tray and I'm a real klutz about things like that. I can stack 3 trays upside down in the top shelf of my dishwasher and they come out perfectly clean - it's a real chore to clean them by hand after you've made jerky, it's very messy.
