Jerky

3 lbs London broil, cut into one-inch by one-quarter-inch strips

1 Tbsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
2/3 cup Worcestershire sauce
2/3 cup soy sauce
1 Tbsp liquid smoke, optional

2-3 Tbsp Tabasco sauce, optional
1-2 tsp crushed red pepper, optional

Put meat and marinade mixture in a gallon-size ziplock back and
marinate overnight in the refrigerator. Next day, stretch the meat
out on paper towels to drain while preparing drying racks. Set the
oven at lowest temperature setting to dry meat. Or use dehydrator,
flipping meat and rotating racks for even drying.
