Jerky Marinade for 7-8 pounds sliced meat
1 T tenderquick 1 t pepper 2 t chili Powder 1 T garlic Powder 1 T onion powder 1-2 t cayenne Pepper 4 T liquid Smoke 1 T kosher Salt 1 T brown Sugar 1/2 C molasses 1/2 C worcestershire 1/2 C teriyaki or Soy sauce
Slice partly frozen meat 1/8"-1/4" thick. Mix all the ingredients, dip the meat in it and lay in a glass or plastic dish. Cover meat with remaining marinade; or put meat and marinade in a Zip-Loc freezer bag, and put in a container. Marinate in the refrigerator overnight or longer, turning to make sure all the meat stays wet. Dry until it bends a little before it breaks. This will fill 6 trays in a dehydrater.
