Beef Jerky

5 pounds lean meat
5 Tbs Morton tender quick
5 tsp Sugar
1 Tbs Black pepper
5 tsp Garlic powder
1 tsp red pepper
1 tsp accent
1/4 tsp marjoram
1/2 tsp cardamom
1 oz liquid smoke mixed with 1 oz water

Coarse grind lean meat. Add all dry ingredients. Mix until
combined. Add liquid smoke/water to meat and mix thoroughly. Roll
into golf ball sized balls. Sandwich between two layers of wax
paper. Press down to about 1/2-inch or less. Sometimes the meat
sticks to the way paper at first, but usually gets better as you
go on. Put in dehydrator or oven at 145 degrees for 6 - 12 hours
for desired texture.
