Mincemeat
Yield: 5 9" pies

1/2 lb lean boiled beef, chopped
1/2 lb beef kidney suet, chopped
3 3/4 lb apples, peeled, cored & chopped
1/2 lb currants
1 lb raisins, chopped
1 tb salt
3 oz candied orange rind, chopped
3 oz Candied lemon rind, chopped
3 oz candied citron, chopped
2 lemon rinds, grated
5 c brown sugar
3 tb cinnamon
2 tb nutmeg
1 ts ginger
1/2 ts ground cloves
5 c cider

Combine all the ingredients in the order given, in a large heavy
pan, and simmer very gently for 2 hours, stirring occasionally.
The placing of an asbestos pad under the kettle will prevent
scorching. When cold turn into jars, cover tightly, and keep in a
dry, cool place. This will keep up to six months.

Note: Brandy may be added before baking the pie.
