Mincemeat
1 lb beef neck 1/2 lb suet 2 lb tart apples 2 c sugar 1 lb currants 1 1/2 lb seedless raisins 1/4 lb citron Juice and grated rind of an orange Juice and grated rind of a lemon 1 c cider or brandy 1 t salt 1 t nutmeg 1/2 t mace
Cook the beef 3 hours. Cool, chop very fine with suet and apples, or force all through food mill. Mix all ingredients together, cook slowly 1 hour. Seal in sterilized jars. Makes 6-7 pints.
Use 2-3 cups mincemeat for one pie. Fill a pastry-lined pie plate, cover with top crust, cut vents. Bake at 450 degrees 35 minutes.
