Mincemeat
2 lb. lean beef or veal, chopped 4 lbs. apples 1/2 lb. suet, ground 2 1/2 lbs. raisins 1 1/2 lbs. currants 4 cups brown sugar 1/2 cup molasses 1/4 lb. citron, ground 1 1/2 tsp. cinnamon 1/2 tsp. cloves 1 tsp. mace 1 1/4 tsp. nutmeg 2 tsp. salt grape juice, cider or water
Pare, core and chop apples. Combine with remaining ingredients in an 8 quart pot. Add water, cider or grape juice to moisten. Simmer until meats and fruits are tender and flavors are blended (about 1 hour). If desired, any other fruit juice may be substituted. Allow to cool. Pack in freshly sterilized jars. Seal.
