Pickled Herring
3 quarts cold water 2 salt herring, cleaned and cut into 3 inch pieces, head and tail removed, and boned if desired or two Schmaltz herring 2 onions, cut in half and sliced thin 1 Tbsp. vegetable oil 1 cup water 1 cup white vinegar or cider vinegar 1 pinch sugar up to 1/2 tsp. Soak herring 24 hours changing water several times. Drain and rinse. Layer herring and onions in a bowl with a cover. Mix remaining ingredients and pour over herring and onions. Cover and chill for two days.
