Potato Korv
(Meat)

3 lb. ground beef
2 lb. lean ground pork
2 lb. parboiled ground potatoes
1/2 cup grated onion
6 cup milk
2 tsp. allspice
3 Tbsp. salt
1 1/2 tsp. white pepper
casings

Mix ingredients in order given (ground beef, ground pork, potatoes,
onion, milk, allspice, salt and white pepper). Stuff into casings.
To cook, bake in 350 degrees oven 1 hour; remove from oven and
brown.

The most difficult part about this recipe is stuffing the sausages -- the meat mixture is liquid enough that it wouldn't flow through my KitchenAid stuffer without being pushed from behind. That said, though, the results were VERY worthwhile -- a mild, soft sausage, flavored slightly of the allspice.
