Sausage

3 pounds of ground pork

1 1/2 teaspoons kosher salt
1 teaspoon cracked fennel seed
1 teaspoon coarse black pepper
1 teaspoon sugar
1 teaspoon (or more) crushed hot peppers
1/2 teaspoon caraway seeds
1 teaspoon coriander seeds, crushed
5 ounces ice water

Mix the spices, whole seeds and all, and put them in the blender
to chop. Then, add the water and blend it some more. You just knead
this mixture into the pork and it's ready!
