Smoked Fish Roe

300 grams fish roe
1/2 cup salt
1/4 cup sugar
1/2 cup wood chips for smoking

Stir together salt sugar and 1/2 cup water. Place roes in brine.
Let stand 10 minutes. Soak chips in water 30 minutes. Place
chips in bottom of roasting pan (having drained them). Place a
rack over chips. Place roes (drained from brine) on rack. Seal
all with aluminum. High heat until it starts to smoke. Turn down
heat 5 minutes. Turn off heat and let stand covered 20 minutes.
