Smoked Salmon

1 to 2 lbs. salmon fillets
kosher salt
dill

Sprinkle salt and dill over cleaned fillets. The flavor is much
better if you salt the fish the night before. Heat your grill and
go by directions on hickory chip bag as to whether you soak or not.
When grill is ready, add a handful of hickory chips and place salmon
on grill skin side down. Place top on smoker and smoke for about
20 minutes, 25 if fillets are very thick. You don't need to turn.
