Italian-Style Turkey Sausage
Yield: 4 servings

1 lb turkey meat, ground
2 tsp fennel or anise seed, whole
2 tsp garlic powder
1/4 tsp chili powder
1/2 tsp onion powder
1/8 tsp red pepper flakes or hot pepper sauce (optional)
1/8 tsp coarse ground black pepper
1/4 cup cold water

In a large bowl, combine ground turkey, fennel seed, garlic powder,
chili powder, onion powder, pepper, and water. Mix well. Cover
and refrigerate several hours or overnight to allow the flavors to
blend.

To cook, divide the mixture into fourths, then form each into a
patty. Broil 2-4 inches from the heat for 10-15 minutes, then turn
and broil 10 minutes more or until well done.
