Apple Chutney 3 lb apples 1/2 lb sultana raisins 1 tsp garlic, finely chopped 1/2 oz mustard seed 1/2 oz ground ginger 1 pint malt vinegar salt cayenne pepper Slice apples rather thickly and let them simmer in the vinegar and sugar until reduced to a pulp - stir often. Add rest of ingredients and mix thoroughly. Turn mixture into a basin keeping it well covered but stirring 2 or 3 times daily for one week, then put in sterilized sealers. Boiling water bath if desired. Will keep for years.
