BERRY SYRUP
2-1/2 quarts strawberries, blackberries, boysenberries, etc. 1-1/2 cups water 2-inch strip of lemon peel 1-1/2 cups water 1-1/2 cups sugar 3-1/2 cups corn syrup 2 Tablespoons lemon juice
Clean berries, remove hulls. Crush berries. Add 1-1/2 cups water and lemon rind. Simmer 5 minutes. Drain through several layers of damp cheesecloth or jelly bag to extract juice and pulp. Mix sugar and water. Boil to 260F degrees. Add berry juice and corn syrup to sugar syrup. Boil 4 minutes. Add lemon juice. Poor hot into hot jars leaving 1/4- inch head space. Adjust caps. Process 10 minutes in boiling water bath. Makes about 3 pints.
