Blackberry Cordial

Select large ripe blackberries. Mash and strain through coarse cheesecloth without heating them. To every quart of juice add 2 cups sugar. Tie in thick muslin bag 41/2 tsp. grated nutmeg, 1 Tbs. whole cinnamon, 1 Tbs. whole clove, 1 small piece of mace. Boil juice and spices slowly for 25 minutes. Remove spice bag and stir in 4 Tbs vanilla extract. Pour into sterilized Kerr jars and seal (1/2" headspace) I also BWB for 10 minutes.

Just wondering how this recipe works? I thought cordial was fermented and with sterilized sealed jars, it seems like that wouldnt be possible. Any thoughts from anyone?
